Frasca is the creation of Master Sommelier Bobby Stuckey and Chef Lachlan Mackinnon-Patterson. Their shared passion for Friuli-Venezia Giulian cuisine and fine wine is reflected in the exquisitely prepared fare and a comprehensive wine list boasting over 200 varieties. The menu changes seasonally to make the most of current harvests and the freshest produce, herbs, and spices. It favors products from the best local farmers and purveyors and reflects Friulian sensibilities about ingredients and proportion according to weather, climate, and calendar. Our menu celebrates the tradition of Frascas with the rustic elegance and simplicity of its dishes. And above all, it is Friulian. Each dish is inspired by the sophisticated flavors and international influences of the area that are at once quintessentially Italian yet unique to this extraordinary region.
At Frasca, we champion our local farmers; the very richness and diversity of Colorado´s food products was a defining factor in our decision to open our restaurant in Boulder. | When I attended the University of Colorado at Boulder in the early 1980´s, the Boulder restaurant scene wasn´t much more than a mix of college bars and health-food shops. So when I returned for a visit last year I really did not expect to find any restaurant that would get me excited. But what I discovered was that something drastically has changed in the Boulder Restaurant scene, and with the opening of Frasca Food & Wine, Boulder has officially became foodie-friendly.
