Bruschetta with Caramelized Onion and Goat Cheese

Description:

This is a very simple appetizer to prepare; yet it is one of the most requested appetizers that I make. The key is to fully caramelize the onions, and use a really good Goat cheese. The honey will counteract and balance the intense flavor of the cheese. Try cutting these in quarters and serve on an appetizer plate.

Ingredients:

4 thin slices of sourdough bread
4 ounces of Goat cheese
1 sweet onion sliced thin
1 tablespoon olive oil
1/4 cup dry white wine
2 tablespoons honey
2 teaspoons olive oil

Instructions:

Make sure that Goat cheese is refrigerated and hard enough to slice.

In pre-heated pan, add olive oil. Add onions and cook until golden brown (fully caramelized). This should take approximately 20 minutes. When onions are brown, add sugar and deglaze with white wine. Cook until all of the liquid is reduced. Remove onions and set aside.

Pre-heat oven to 400 degrees.

Lightly brush one side of the bread with olive oil and toast until lightly browned. Cover toasted bread with caramelized onions. Layer the top of the onions with slices of goat cheese and drizzle with honey. Place in oven and bake until golden brown (approximately 4-5 minutes).
