Bruschetta with Shaved Beef and Gorgonzola

Sourdough baguette, sliced on angle 1/2 inch thick, 8 pieces
4 oz sirloin steak, approximately 1 inch thick
1/4 cup Gorgonzola cheese, grated
1 small tomato, diced
1 small bell pepper, diced
4 green onions, diced
2 oz of sweet balsamic vinegar
1 oz Italian salad dressing
8 leaves of fennel
3 oz of grated Parmesan cheese
Salt and pepper
Olive oil


Heat oven to 400 degrees. Salt and pepper steak, and then bake until medium rare (approximately 5 minutes). Remove steak and let stand until cool.

Shave steak into thin slices, 2 inches long.

Make pesto by mixing tomato, bell pepper, green onions, balsamic vinegar, Italian dressing, salt and pepper.

Coat slices of baguette with a light brush of olive oil and toast until brown. Then cover with layer of Gorgonzola cheese.

Place slice of steak on cheese, then cover with pesto, and sprinkle with Parmesan cheese.

Add slice of fennel over top and serve.
