Chopped Vinaigrette Salad with Shaved Carrots and Curry

1 head romaine lettuce, chopped
4 carrots shaved
2 pears sliced ?" thick
1/4 cup Italian parsley, chopped
1/2 cup extra virgin olive oil
1/4 cup white wine vinegar
2 tablespoons honey
1 tablespoon curry powder
1 teaspoon salt
1 teaspoon fresh ground pepper


In a large bowl, toss the lettuce, carrots, pears and parsley.

In a food processor, add wine vinegar, honey, curry powder, salt and pepper. While processor is running, slowly pour in olive oil and blend to a smooth consistency.

Pour over salad and toss.
