Cornish Hens with Spicy Garlic Salsa

Description:

Ingredients:

6 Cornish hens, cut into quarters
4 Serrano chilies
Juice from 3 limes
1 lime, sliced thinly
1/4 cup red wine vinegar
1/4 cup Dijon mustard
1/4 cup honey
4 cloves garlic
1/2 cup of cilantro, minced
8 cilantro sprigs
1/2 cup olive oil
Salt & pepper
1/2 cup crumbled white Monterey Jack cheese

Instructions:

In a food processor, create salsa mix using the Serrano chilies, lime juice, red wine vinegar, Dijon mustard, honey, garlic, minced cilantro, and olive oil. Blend thoroughly.

Place hens in a large storage bad and pour salsa mix over top. Place in refrigerator overnight.

Remove hens and pour remaining salsa mix into a pot. Cook mix for 10-15 minutes until it slightly thickens.

Grill hens 8-10 minutes on each side.

Serve each hen with a tablespoon of salsa, sprinkle with crumbled cheese, and garnish with limes and cilantro sprigs.
