Crab Salad

1 lb fresh crab meat
3 tablespoons fat free mayo
1/4 sweet yellow onion, finely minced
1 stalk celery, finely minced
1/2 carrot, finely minced
1/2 jalapeno pepper, finely minced
1-2 teaspoons of lemon juice to tasteÊ
1 teaspoon fresh thyme
1 pinch cayenne pepper
Salt & pepper to taste


Using a mini-food processors, finely mince the onion, celery, carrot, and jalapeno pepper.

Mix all of the ingredients in a bowl, then cover and place in the refrigerator for at least 1 hour.
