French Green Beans

1 1/2 lbs French green beans (haricot verts), stems removed
1 shallot, minced
1 teaspoon diced lemon zest
1 tablespoon diced Italian parsley
2 tablespoons olive oil
Salt and pepper


Fill medium sized pot with water and bring to a boil. Add beans and cook until tender but still resistant to bite.

Remove and drain beans, then plunge into cold water (add ice as necessary). This will prevent the beans from cooking their own heat and getting too soft.

In a pre-heated pan on medium to high heat, heat the oil then add shallots and cook until softened (about 2-3 minutes).

Add beans and saute until brown (about 4-5 minutes). Then stir in lemon zest and cook 1 minute. Season with salt and pepper to taste.

Serve with parsley garnish.
