Heirloom Tomatoes with Goat Cheese

This is a simple appetizer using fresh heirloom tomatoes. Make sure you use organic vine-ripened tomatoes!


8 oz soft goat cheese
1/4 cup heavy cream
3/4 cup basil
3/4 cup mint
1 cup olive oil
4 heirloom tomatoes
1/4 cup crushed walnuts


Mix cream with goat cheese and set aside.

Create a basil and mint infused oil by mixing 3/4 cup basil and 3/4 cup mint leaves in food processor. Add salt and 1 cup olive oil while mixing.

Slice tomatoes about 1/2 in thick.

Put one spoon of goat cheese mix on tomato, sprinkle with salt and drizzle with basil/mint oil.

Sprinkle with crushed walnuts and serve.
