Italian Meatballs

Description:

Italians traditionally do not serve their meatballs over pasta such as the American version of ´Spaghetti and Meatballs.´ This is a traditional Italian style meatball that is slow cooked in Marinara sauce. You can serve this as either a main course or an appetizer.

Ingredients:

1/2 lb ground beef
1/2 lb ground veal
1/4 lb ground pork
1/2 cup Italian parsley, minced
1/2 tablespoon Oregano
2 tablespoons dry vermouth
Grated zest of 2 lemons
2 cups soft, white bread crumbs
2 eggs
2 garlic cloves, minced
1 teaspoon kosher salt
1 teaspoon fresh ground pepper
6 cups of marinara sauce (see recipe)

Instructions:

In deep pot, prepare a Marinara sauce (see recipe).

In a large bowl, mix all ingredients and form balls approximately 2 inches in diameter.

Place meatballs in sauce, cover and cook for 40 minutes.

Remove lid and cook for an additional 20 minutes until sauce is reduced, skimming off any excess grease.
