Poblanos Stuffed with Cipotle Roasted Chicken

Description:

Ingredients:

4 boneless skinless chicken breast cut in cubes
4 poblano chiles cut in half and cleaned
1/4 lb soft white cheese sliced thin
1 white onion sliced thin
4 cloves garlic diced
4 chipotles diced
2 tablespoons cilantro diced
1 can chopped tomatoes with juice
1 teaspoon cumin
Salt & pepper
Olive oil

Instructions:

Preheat oven to 400 degrees.

Slice poblano peppers in half lengthwise. Coat both sides with garlic infused olive oil.

Place peppers on baking sheet and place in oven until softened (about 10 minutes). Can use grill instead.

In preheated pan on high, add olive oil and garlic. Cook until garlic softened but not brown (about 2-3 minutes).

Add chicken and brown on all sides (about 10 minutes).

Add onions and cook until softened (about 5 minutes), stirring constantly.

Add cilantro, chipotles, cumin and tomatoes. Stir thoroughly and cook until juices are completely reduced.

Put chicken mix over peppers and cover with thin layer of cheese. Place in oven for 10-15 minutes.
