Ranchero Sauce

Description:

This sauce is great drizzling sauce for a variety of Mexican dishes.

Ingredients:

1/2 yellow onion, diced
1/2 green bell pepper, diced
1 jalapeño pepper, diced
3 cloves garlic, diced
1 tablespoon taco seasoning mix (see recipe)
1/2 teaspoon cayenne pepper
2 cups chicken broth
1 8-ounce can tomato sauce
1/4 cup fresh cilantro, chopped
1 tablespoon olive oil

Instructions:

In a preheated pan on high heat, add the olive oil and cook the onions, bell pepper and jalapeño pepper until softened (about 5-6 minutes).  

Add the taco seasoning mix and cayenne pepper and deglaze with chicken broth.  Allow to cook down for 2-3 minutes.

Add the tomato sauce and cook until sauce thickens and reduces (about 10-15 minutes). Stir in the Cilantro and cook for additional 2 minutes.

Pour mixture into a food processor or blender and blend until you achieve a fine puree.  Should produce about 1 1/2 cups.  Store in refrigerator until ready to use.
