Raspberry Chiptole Sauce

I created this sauce for my Garlic Chipotle Pork Rib Roast ala Diablo. ÊMakes about 1/2 cup of sauce.


1/4 cup green onions diced
2 tablespoons butter
2 tablespoons raspberry jam
2 chipotle peppers diced
1/4 cup balsamic vinegar
1/4 cup red wine
1/2 teaspoon kosher salt
Fresh ground pepper


In a preheated pan on medium to high heat, add one tablespoon of butter. As soon as the butter melts, add the green onions and cook until softened (about 3 minutes). Add the chipotle peppers and cook for at least 3 minutes more. Season with salt and pepper.

Add the raspberry jam, balsamic vinegar and wine and cook until reduced (3-5 minutes).

Whisk in the remaining butter just prior to serving.
