Tuna Shashimi

Ingredients:
1 lb cut and squared tuna back
4 tablespoons creole seasoning mix
1/2 cup soy sauce
1/4 cup rice wine
1 tablespoon sliced green onions
Instructions:
Mix soy sauce, rice wine and green onions and store in refrigerator until needed.
Prepare tuna back to create two blocks of tuna 1.5"W x 1"H x 8"T blocks.
Roll tuna in creole mix, cover and place in refrigerator for at least one hour.
Preheat heavy pan (preferably black iron skillet) until extremely hot (at least 8 10 minutes).
Place tuna in pan and sear on each side for 30-45 seconds.
Remove and cut tuna in 1/4" thick slices.
