Roasted Pepper Salsa

Description:

I use this salsa on burgers, sliders and bruschetta.

Ingredients:

1 red bell pepper sliced in sections
1 yellow bell pepper sliced in sections
1 jalapeno pepper sliced in sections
1 poblano pepper sliced in sections
2 long hot peppers
4 cloves of garlic
2 teaspoons ketchup
1 teaspoon mustard
1 teaspoon Worchester sauce
1-2 teaspoons Tabasco sauce
1/2 teaspoon lemon juice
2 tablespoons olive oil
Salt and pepper

Instructions:

Lightly coat all of the peppers and garlic with olive oil and place on grill at medium heat.  Keep turning the peppers and garlic until they are soft and lightly brown on all sides (about 8-10 minutes).

Place peppers and garlic in a food processor and mix until completely minced.

Transfer pepper and garlic mix to a bowl and add the ketchup, mustard, worchester sauce and lemon juice.   Add tabasco sauce, salt and pepper to taste.

Cover and refrigerate until ready to use.
