Seasoned Sauteed Potatoes

Description:

Ingredients:

4 lbs potatoes, peeled and cubed
2 tablespoons fresh rosemary minced
3 tablespoons clarified butter
1 tablespoon regular butter
1 tablespoon paprika
salt & pepper

Instructions:

Place the potatoes in a bowl of water and one cup of ice for 10-15 minutes. Drain and rinse. Dry thoroughly with paper towels.

In a large bowl, mix the potatoes, paprika, salt & pepper. Using a microwave or small pan over low heat, melt one tablespoon of clarified butter and mix butter into the seasoned potatoes, thoroughly coating on all sides.

Preheat large pan on high heat for at least 5 minutes. Add the remaining clarified butter.

Add potatoes making sure that all pieces rest on the hot surface of the pan. Cook for 3 minutes until golden brown. Turn the potatoes and continue cooking each side until golden brown (about 3 minutes per side).

Reduce heat to medium and cook for 10 minutes, stirring occasionally.

Add the regular butter and allow to melt, then sprinkle the thyme over the potatoes and stir. Cook for 5-10 minutes until potatoes are tender inside.
