Tamarind Glazed Chicken

1 whole roaster chicken, split in half
4 oranges, squeezed with pulp
1 small red onion, finely diced
2 tablespoons olive oil
2 tablespoons minced ginger
1/2 cup rice wine
1/2 cup chicken broth
3 tablespoons tamarind sauce
1 teaspoon honey
Salt & pepper


Pre-heat over to 400 degrees. Rub chicken with kosher salt and fresh ground pepper. Pre-bake chicken for 45 minutes and remove.

In pre-heated pan, add olive oil and brown onions & ginger for 3-5 minutes. Deglaze pan with rice wine and let cook until wine reduces (about 3 minutes). Add chicken broth and freshly squeezed orange juice with pulp. Let cook down for about 25 minutes.

Add tamarind sauce, honey, fresh ground pepper and salt. Cook for an additional 5 minutes.

Baste chicken with sauce on both sides. Place on grill and cook until crisp, turning only once.
